Roast Potatoes
Best potatoes.
Ingredients
- Bag of potatoes, good for roasting. Maris Piper is my favourite, Yukon Gold is OK
- vegetable oil
Method
Peel and cut potatoes into roughly equal pieces, aiming for 3-4 pieces per person (or, if eating with my brother, double portions).
Cover potatoes with cold water in a big pan, bring to the boil. Par boil for 5 minutes or so, until surface slightly floury.
Drain potatoes, put back in the pan (off the heat), place a lid on and shake the pan a little to roughen up the edges of the potatoes.
Pre heat oven to 250C/480F.
Get a roasting pan and add a little oil or goose fat etc, put in the oven to heat the oil.
Take the pan out of the oven and spread the potatoes over it. Baste with oil, season.
Cook for about an hour, basting and turning a couple of times, until crunchy.
