Peanut Chicken Bhudda Bowl
A delicious bowl of sweet flavours.
Ingredients
- Sweet potato (1-2)
- Red onion (1)
- Spinach (2 cups)
- Chicken breast (1lb)
- Garlic
- Ginger powder
- Garlic powder
- Soy sauce (1 tbsp)
- Smooth peanut butter (2 tbsp)
- Honey (1 tbsp)
- Lime juice (1/4 cup)
- Sesame oil (1 tbsp)
- Avacado (1)
- Rice/Noodles (4 cups)
Method
Preheat oven to 425F.
Cut up sweet potatoes and onion into pieces for baking, and spread on a baking sheet. Toss in olive oil and season. Bake for 20-25mins.
Meanwhile, season chicken with salt, pepper, garlic, and ginger powder. Cook chicken in a frying pan, about 7 minutes per side. Rest and then cut up into pieces.
Make dressing by whisking together peanut butter, soy sauce, honey, lime juice, sesame oil, crushed garlic and 1 tbsp olive oil.
Make bowls with noodles/rice, baked sweet potato and onion, spinach and chicken. Add peanut sauce on top.
