Couscous salad
Ingredients
- Couscous (we like pearl)
- Dried apricots
- Apple or pear juice
- Pomegranate seeds
- Olives (sliced)
- Cucumber
- Cherry tomatoes
- Parsley
Method
Cook couscous according to packet directions, though instead of water, use the juice (I replace 1/2 to 2/3rds of the water with juice, leave rest as water). Add chopped dried apricots (use scissors) as it cooks to soften them. Leave to cool.
Once cool, add pomegranate seeds, sliced cucumber, halved cherry tomatoes, olives, and top with chopped parsley.
