The best mash potatoes!

Ingredients

  • Potatoes - something floury like idaho is the best
  • Butter
  • Milk
  • Cabbage
  • Spring Onions
  • Bay leaves

Method

Cut up and cook the cabbage in a large pan of salted water. When cooked, drain but reserve water. Set cabbage aside.

Meanwhile, peel and cut the potatoes into similarly sized chunks. Cover with the cabbage water in a large pan, salt. Bring to the boil and cook until done (about 20mins).

Finely chop spring onion, put in a small pan with the milk, butter, and bay leaves. Bring up to almost boiling but don’t boil! After a minute turn off the heat - just looking to infuse the milk.

Pour this mixture over the potatoes gradually (remove the bay leaves), mash to desired consistency. Season heavily.
