Bolognese
I love a good bolognese, it’s such a great base and can go in many directions. This is my current favourite method.
Ingredients
- Mince beef (lean and ground brisket)
- Smokey bacon (could use pancetta)
- Tin tomato x 2
- Basil
- Thyme
- Tomato purée
- Garlic
- Onion x2
- Pinch sugar
- Worcestershire sauce
- Pasta
- Parmesan shavings
Method
Dice 1 onion and mince garlic, start to fry in oil. Cut bacon into small squares and add to onion and garlic. When cooked through, remove from pan.
Dice another onion, fry that with garlic salt and pepper to season. Add the tomato puree when almost done. Then add the mince. Cook gently to brown all over. When done, add the tinned tomato and the sugar, bring to a boil and reduce to simmer. Add herbs and worcestershire sauce and simmer for 30mins. Add the bacon, onion and garlic mix and simmer for another 30 mins on reallllly low heat. Season as required. Cooking this longer is better.
Serve with spagehetti or rigatoni, parmesan on top.
