Ingredients

  • 2.2lb stewing steak/chuck
  • 2 onions/4 shallots
  • Garlic
  • 2tbsp Plain flour
  • 500ml Guinness
  • 2 bay leaves
  • Sprig thyme
  • 2tbsp Worcestershire sauce
  • 500ml beef stock
  • 1tbsp Tomato paste
  • Pie crusts x2
  • Puff pastry sheets x2

Method

Season the beef in a large bowl, add bay leaves and thyme pour over Guinness and leave for 4hrs/overnight covered in the fridge.

Preheat oven to 320F.

Heat oil in a dutch oven on high.

Drain beef (RESERVE marinade) and pat dry, then brown in small batches until it has that rich brown color. Put on a plate when done.

Turn down the heat to medium-low, add the chopped onion or shallots, as well as the garlic. Cook, stirring, for 10-15 until soft.

Sprinkle flour over, stir and cook for a couple minutes more.

Slowly now add the marinade from earlier, stirring as you go to avoid lumps. Don’t add and stop, constant pour. Bring to a boil, simmer and cook down for 10 minutes.

Add the worcestershire sauce, tomato paste, and stock, along with the beef. Bring to a boil, then cover with the pot lid, and put it into the oven for ~2 hrs until the beef is tender.

Take out of the oven, and then carefully drain off the top oil with a spoon. At this point, turn up the oven to 400F, and bake the empty pie crusts in it as instructions say.

When the crusts are done, put the beef stew in a crust, top with the puff pastry, and bake for ~25mins or until puff pastry is done.

Serve with:

  • Mushy peas (cook peas, add chopped mint and 1 tbsp sour cream as you mush)
  • Mash potato
