Whilst cooking for a friend (hi Shannon!) trying to eat high protein meals, we came across a recipe that marinaded chicken thighs in balsamic vinegar. It was good, but since then I’ve refined it and now it’s properly delicious and still pretty healthy (serve with salad/greens!).

Ingredients

  • 4 boneless, skinless, chicken thighs
  • olive oil
  • garlic - 2 cloves
  • 1/4 cup balsamic vinegar
  • 2 tbsp brown sugar
  • 1 tbsp worcestershire sauce
  • 1 tbsp soy sauce

Method

Mince garlic and put in a small mixing bowl. Add olive oil, vinegar, sugar, soy, worcester, and some black pepper.

Put the chicken in a zip-lock bag (or a bowl with some cling film), and pour in the marinade, making sure the chicken is all covered in it. Marinade for 1-2 hours (you can leave for longer but I find it makes it a little too strong for me).

Preheat the oven to 375F, pour chicken and marinade into baking dish and bake for 45mins. Baste the chicken with the marinade a couple of times during this.

Eat!
